Ingredients

For the Chocolate Crust

  • 2 cups (200 g) chocolate cookie crumbs

  • 6 tbsp (85 g) unsalted butter, melted

For the Cheesecake Filling

  • 24 oz (680 g) cream cheese, softened

  • 1 cup (200 g) brown sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup (120 ml) heavy cream

  • ½ cup (120 g) caramel sauce

  • ½ cup (90 g) mini chocolate chips

For the Chocolate Ganache

  • 1 cup (170 g) semi-sweet chocolate chips

  • ½ cup (120 ml) heavy cream

For the Toppings

  • ½ cup (120 g) caramel sauce

  • 1 cup (120 g) pecan halves

  • ½ cup chopped chocolate candies or peanut butter cups

  • Flaky sea salt (optional)

Instructions

Step 1 – Prepare the Crust

  1. Preheat oven to 325°F (165°C).

  2. Mix cookie crumbs and melted butter.

  3. Press firmly into the bottom of a 9-inch springform pan.

  4. Bake for 10 minutes.

  5. Cool completely.

Step 2 – Make the Cheesecake Filling

  1. Beat cream cheese until smooth.

  2. Add brown sugar and vanilla.

  3. Mix in eggs one at a time.

  4. Stir in heavy cream and caramel sauce.

  5. Fold in mini chocolate chips.

  6. Pour over prepared crust.

Step 4 – Make the Ganache

  1. Heat heavy cream until steaming.

  2. Pour over chocolate chips.

  3. Let sit for 2 minutes.

  4. Stir until silky smooth.

Step 5 – Decorate

  1. Pour ganache over chilled cheesecake.

  2. Drizzle generously with caramel sauce.

  3. Top with pecans.

  4. Add chopped chocolate candies.

  5. Sprinkle lightly with flaky sea salt.
