Ingredients

2 cups (200 g) chocolate cookie crumbs

6 tbsp (85 g) unsalted butter, melted
For the Cheesecake Filling

24 oz (680 g) cream cheese, softened

1 cup (200 g) brown sugar

3 large eggs
-
1 tsp vanilla extract
-
½ cup (120 ml) heavy cream
-
½ cup (120 g) caramel sauce
-
½ cup (90 g) mini chocolate chips
For the Chocolate Ganache

1 cup (170 g) semi-sweet chocolate chips
-
½ cup (120 ml) heavy cream
For the Toppings
-
½ cup (120 g) caramel sauce
-
1 cup (120 g) pecan halves
-
½ cup chopped chocolate candies or peanut butter cups
-
Flaky sea salt (optional)
Instructions
Step 1 – Prepare the Crust

Preheat oven to 325°F (165°C).

Mix cookie crumbs and melted butter.

Press firmly into the bottom of a 9-inch springform pan.

Bake for 10 minutes.

Cool completely.
Step 2 – Make the Cheesecake Filling

Beat cream cheese until smooth.

Add brown sugar and vanilla.

Mix in eggs one at a time.

Stir in heavy cream and caramel sauce.

Fold in mini chocolate chips.

Pour over prepared crust.
Step 3 – Bake

Add hot water halfway up the sides.

Center should still have a slight jiggle.

Turn off oven and leave door cracked for 1 hour.

Pour over chocolate chips.

Let sit for 2 minutes.

Stir until silky smooth.
Step 5 – Decorate

Pour ganache over chilled cheesecake.

Drizzle generously with caramel sauce.

Top with pecans.

Add chopped chocolate candies.

Sprinkle lightly with flaky sea salt.
