Ingredients

For the Blueberry Compote Center

  • 1 1/2 cups fresh blueberries

  • 3 tbsp sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch

  • 1 tbsp water

For the Cheesecake Filling

  • 8 oz cream cheese, softened

  • 1/3 cup powdered sugar

  • 1 tsp vanilla extract

  • 1/2 cup whipped cream

For the Blue Mochi Layer

  • 1 cup glutinous rice flour

  • 1/4 cup sugar

  • 1 cup milk

  • 1 tbsp butter

  • Blue food coloring or blueberry powder

Decoration

  • Fresh blueberries

  • Powdered sugar (optional)

Instructions

Step 1: Make the Blueberry Lava Center

  1. Add blueberries, sugar, and lemon juice to a saucepan.

  2. Cook over medium heat for 5–7 minutes until juicy.

  3. Mix cornstarch with water and pour into the berries.

  4. Stir until thick and glossy.

  5. Let cool completely.

  6. Spoon small portions onto a tray and freeze for 1 hour.

Step 2: Prepare the Cheesecake Filling

  1. Beat cream cheese until smooth.

  2. Add powdered sugar and vanilla.

  3. Fold in whipped cream gently.

  4. Chill until slightly firm.

Step 3: Make the Mochi Dough

  1. In a microwave-safe bowl, combine glutinous rice flour, sugar, and milk.

  2. Add a few drops of blue food coloring.

  3. Mix until smooth.

  4. Cover loosely and microwave for 2 minutes.

  5. Stir carefully, then microwave another 1–2 minutes until sticky and glossy.

  6. Add butter and knead while warm.

  7. Dust with cornstarch to prevent sticking.

Step 4: Assemble the Dessert

  1. Flatten a piece of mochi dough into a circle.

  2. Add cheesecake filling in the center.

  3. Place a frozen blueberry compote portion inside.

  4. Cover with more cheesecake filling if needed.

  5. Carefully wrap and seal the mochi around the filling.

  6. Shape into smooth spheres.

Step 5: Chill & Serve

  1. Refrigerate for at least 2 hours.

  2. Slice carefully before serving for the lava effect.

  3. Garnish with fresh blueberries.

Tips for the Perfect Lava Effect

  • Freeze the blueberry center before assembling.

  • Chill the finished mochi well so it slices cleanly.

  • Use full-fat cream cheese for a richer texture.
