Crispy Cheese Croquettes with Purple Sweet Potato Mash & Cream Sauce

Ingredients

Croquettes

  • 200 g mozzarella or cheddar cheese (cut into cubes)
  • 2 medium potatoes (boiled and mashed)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • Salt and pepper
  • Oil for frying

Purple Sweet Potato Mash

  • 2 purple sweet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk or cream
  • Salt to taste

Cream Sauce

  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 clove garlic (minced)
  • Salt and pepper
  • Optional: grated parmesan cheese

Instructions

1. Prepare the Croquettes

  • In a bowl, mix the mashed potatoes with salt and pepper.
  • Take a small portion of the mixture, flatten it, and place a cube of cheese in the center.
  • Shape into a ball and seal well.
  • Coat each ball in flour, then dip into beaten egg, and finally roll in breadcrumbs.
  • Heat oil and deep-fry until golden brown and crispy.

2. Make the Purple Sweet Potato Mash

  • Boil the purple sweet potatoes until tender.
  • Mash until smooth.
  • Add butter and milk, then mix until creamy.
  • Season lightly with salt.

3. Prepare the Cream Sauce

  • Melt butter in a pan over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Pour in the cream and simmer until slightly thickened.
  • Season with salt and pepper.
  • Add parmesan cheese if desired for extra flavor.

4. Assemble the Dish

  • Spread the purple sweet potato mash onto a plate as a base.
  • Place the crispy croquettes on top.
  • Drizzle the cream sauce over the croquettes.
  • Garnish with microgreens or edible flowers for presentation.

Tips

  • Chill the croquettes for 10–15 minutes before frying to help them hold their shape.
  • Maintain oil temperature around 170–180°C for even frying.
  • Use a melty cheese for a soft, gooey center.
